What is in it

In the order they appear on the label, which is the order of weight. The first few make up most of the bar; the last few are measured in fractions of a gram.

  1. 01Oat flakes

    Complex carbohydrates, plus beta-glucan, a soluble fibre.

    The body of the bar. Everything else is built on top of it.

  2. 02Grass-fed whey protein

    A complete protein: all nine essential amino acids.

    Most of the 35 g of protein. From milk, so it is declared as an allergen.

  3. 03Beef protein (collagen)

    A protein rich in glycine and proline.

    Adds chew, so the bar does not crumble the moment you bite it.

  4. 04Agave syrup

    Sugars, largely fructose.

    Sweetens and binds. The whole bar comes to 12 g of sugars.

  5. 05Coconut oil

    Fat, mostly saturated, including medium-chain fatty acids.

    Carries the chilli and the spices, which are fat-soluble.

  6. 06Date paste

    Sugars with fibre and potassium.

    The second sweetener, and the reason the mix holds its shape.

  7. 07Strawberry

    Contains vitamin C and anthocyanins, which give it the red.

    The first berry you taste, and half of where the colour comes from.

  8. 08Arrowroot

    Starch from the arrowroot rhizome.

    Binds without taste, so the fruit and the heat stay in front.

    Contains lycopene and potassium.

    Savoury depth under the fruit. It is what makes this read as harissa.

  10. 10Acacia gum

    Almost entirely soluble fibre.

    Thickens with fibre rather than with starch.

  11. 11Psyllium husk

    One of the densest sources of soluble fibre there is.

    Holds water. Without it a 100 g bar eats like sawdust.

  12. 12Beetroot

    Contains betalains, folate and nitrate.

    Earthiness and deep colour, so the red is not only fruit.

  13. 13Pepper (capsicum)

    Sweet capsicum, high in vitamin C.

    The body of the harissa. Warm rather than hot.

  14. 14Goji berry

    A dried berry containing carotenoids.

    A slightly bitter, tea-like note against the sweetness.

  15. 15Cinnamon

    Bark spice, high in polyphenols.

    Bridges the berries and the chilli.

  16. 16Grated coconut

    Fat and insoluble fibre.

    Softens the edges of the spice.

  17. 17Inulin

    Soluble fibre extracted from chicory root.

    Adds fibre and a mild sweetness, so less syrup is needed.

  18. 18Maca

    A Peruvian root, dried and milled.

    Malty and slightly nutty. Rounds out the earthy side.

  19. 19Raspberry

    Fibre in the seeds, anthocyanins in the skin.

    Sharper than the strawberry, and what keeps the fruit from going jammy.

  20. 20Sumac

    A dried drupe, tart from malic acid.

    Sourness without liquid, in the Middle Eastern way.

  21. 21Hibiscus

    Dried calyces, tart and deeply red.

    Lifts the colour and adds a cranberry-like edge.

  22. 22Salt

    Sodium chloride. The bar contains 0.5 g of salt per 100 g.

    The switch that turns the spices on.

  23. 23Pomegranate

    Contains punicalagins and vitamin C.

    Sweet-sour, and a traditional partner to harissa.

  24. 24Citric acid

    The acid that occurs naturally in citrus fruit.

    Holds the red and keeps the fruit tasting fresh.

  25. 25Vanilla

    A cured orchid pod, vanillin among its aromatics.

    Softens the chilli so the heat arrives late.

  26. 26Stevia leaf extract

    Steviol glycosides from the stevia leaf. Sweet, no energy.

    Tops up the sweetness so the syrup can stay low.

  27. 27Cardamom

    A seed pod, aromatic from cineole.

    The cool note that stops the spice being one-directional.

  28. 28Garlic

    A bulb containing sulphur compounds.

    Present in a very small dose. It is the savoury floor, not a flavour.

  29. 29Chili

    Contains capsaicin, which is what you feel.

    The blaze. Late, warm, and gone again by the next bite.

  30. 30Saffron

    Crocus stigmas, picked by hand.

    The most expensive gram in the bar, for a note you would miss if it left.
